The grilled aubergines are
selected from the best fresh harvest in the south of Italy and then simply cut
into slices and slowly oven-roasted and grilled. We reduce the level of water
to have a roasted flavor and crunchy texture typical of homemade grilled
vegetables. Secondly, they are dipped in sunflower oil and marinated with
spices and herbs. Perfect in sandwiches, bruschetta topping or as an
accompaniment for meat dishes.
